Oatmeal Fudge Bars
It’s been a while since I have shared a recipe with you but this is a good one with the family’s seal of approval! Last week we were sent a case (6) of Sweetened Condensed Coconut Milk. Oh my! Yummy or what? Truly delicious and good straight out of the can BUT I needed to test it in some form of baking to see how it worked before reviewing it. Here’s what we ate!
OATMEAL FUDGE BARS
COOKIE DOUGH:
2 1/2 cups flour
3 cups of regular oats
1/2 tsp salt
1 tsp baking soda
1 cup (2 sticks) of butter
1 cup sugar
2 eggs
1 Tbsp of pure vanilla extract
FUDGE:
1 can Sweetened Condensed Coconut Milk*
2 Tbsp cocoa powder
3 Tbsp butter
1 Tbsp of pure vanilla extract
INSTRUCTIONS:
1. Preheat oven to 350F.
2. Line a 9″ x 13″ pan with parchment paper. (Doing this allows you to remove the somewhat sticky cake from the pan easily when cooked.)
3. Combine flour, oats, salt and baking powder.
4. In a separate bowl beat the butter and sugar until light and fluffy.
5. Add the eggs and vanilla, beating until combined.
6. Slowly add the flour and oat mixture, ensuring that all the ingredients are well combined. Set aside.
7. For the fudge blend the butter, cocoa powder and condensed milk over a medium heat until well combined.
8. Remove from heat and stir in vanilla.
9. Press 2/3 of the dough into the bottom of your prepared pan.
10. Pour fudge topping over the top of the pressed dough ensuring it is spread evenly.
11. Drop pieces of remaining dough on top.
12. Cook for approximately 30 minutes until middle is set.
13. Allow to cool and then enjoy!
*Can use regular condensed milk if you wish.
If you can wait this long, this cake actually has a stronger coconut flavor the following day.
