PIzza Dough made with Whey
Reserving 2 cups of whey from when you made your Mozzarella Cheese you are now ready to make your Pizza Dough 🙂 Once again all credit goes to Ricki Carroll of New England Cheesemaking Supply Company for this recipe although I use whole wheat flour instead of white all-purpose flour.
2 cups of whey
4 tbsp of extra virgin olive oil
6 1/2 to 7 cups of wheat flour
2 tbsp of yeast
1 1/2 tsp salt
2-4 tbsp vital wheat gluten (optional)
If you have a bread machine, put the ingredients in the pan in the order listed & just switch on the dough cycle. If you are kneading by hand then you need to mix very warm whey & olive oil into the dry ingredients (4 cups of flour, salt & yeast.) Once mixed in, gradually stir in enough of the remaining flour to make a soft dough. Knead for 4-5 mins then cover & let rest for 10 minutes before rolling.
This recipe above has been doubled & will make 4 pizzas. (Half the amounts for only 2 pizzas.) I never make round ones as they take up too much space in the oven. I always use rectangular trays so that I can cook four pizzas at once. I have to make four different ones to please everyone’s taste here!
What do we put on our pizzas? Tomato Sauce, cooked homemade sausage, hot chilli pepper, cooked onions, olives & anchovies on Daniel’s & Richard’s, any other fresh veggies we may have lying around & then topped off with the homemade grated Mozzarella Cheese.

Hi,
I have some whey leftovers ( from homemade yogurt )
So I will be trying your recipe soon.
Now I need to find a good recipe for pizza sauce. ( last time I tried and failed to recreate correct taste )
