Lemon Oatmeal Cake with Frosting :)


I made this cake for Michelle’s birthday earlier this week and as it was so yummy and moist, figured I would share it with you 🙂 It is similar to my Chocolate Oatmeal Picnic Cake but obviously without the chocolate and has an added bonus of frosting on the top!

CAKE ingredients and instructions:

1. Mix together and let stand of 10 mins:

1 1/4 cups boiling water

1 cup rolled oats

2. In the meantime cream together:

1/3 cup butter

3/4 cup honey

Grated rind of 1 lemon

3. Add following to “creamed” mixture and beat well:

2 eggs

Oat mixture from above

4. Stir in:

1 1/2 cups spelt or whole wheat flour

2 tsp baking powder

1 tsp baking soda

1 /2 tsp salt

5. Pour into a 13″ x 9″ pan, bake at 350F for 30-40 mins.

6. Pour juice of 1 lemon over the HOT cake.

7. Allow cake to cool thoroughly before adding frosting.


FROSTING ingredients and instructions:

1. Cream together:

1/2 cup (1 stick) butter

1/2 to 3/4 cup honey (Adjust depending on the sweetness of your honey.)

Grated rind of 1 lemon

2. Spread on cooled cake and enjoy!
