Applesauce Cake

Someone was asking me for this recipe today so I thought I would share it with you all 🙂 This is a recipe that our good friends Walt & Bev gave to us many years ago. I have altered it slightly, cut the sweetness & of course make it with whole wheat flour.

Cream together:

1 cup of butter

3/4 to 1 cup of honey

4 eggs

2 tsp vanilla

Add to mixture:

2 cups hot unsweetened applesauce containing

1 tsp baking soda

I have found the best thing to do with this to prevent it erupting like a volcano is to heat a pint jar of Applesauce (lid off) in the microwave & then stir in the baking soda.

Add following dry ingredients:

1/2 tsp salt

1 tsp cinnamon

1 tsp cloves

3 1/2 cups whole wheat flour

3 tsp baking powder

Stir in:

2 cups raisins

1 cup walnuts (optional – I do not put these in)

Divide between 2 loaf pans. Bake at 325F for about an hour – use a sharp knife to check if done. If it comes out clean you know it’s cooked. Eat hot, warm or cold. Delicious either way 🙂
